OUROBOROS is a kijo sake (a method of making sake in which sake is used instead of water during the brewing process) type.

We started making this sake in 2019 when all of our contract farmers' Koshitanrei rice was out of equal quality due to cold damage. At the time, Tenryo Sake only had a specific name sake, and we could no longer make sake using that Koshitanrei because we could not claim the specific name with out-of-quality rice. Since the rice was grown under contract, if we did not take it back, the farmer's income would be zero. Without any use for the rice, we purchased Koshi-tanrei, which was out of the specified range, and desperately searched for a use for it, and arrived at kijo-zake. The result was kijo-zake, which could be made with out-of-grade rice. (Currently, we use graded Koshitanrei rice.) The sake used for brewing is 16-year-old Tenryohai sake. The sake used in the brewing process is Tenryohai's 16-year-old sake.

In fact, it has a surprisingly high repeat rate.

Although it is a kijoshu, the acidity is quite strong, so when you put it in your mouth, the rich sweetness swells up and disappears as soon as you swallow it. It is a sake that should be drunk with sensitivity, not with the information that it is a kijoshu.
