・Senkinnissei

A premium series from Sentori, Tochigi Prefecture.
It has a gentle isoamyl fruit aroma and is as smooth as water on the palate, yet it has a fine sweetness on the palate and an elegant acidity. The inherent potential of Yamada-Nishiki is immeasurable, and we were able to obtain a very high quality Yamada-Nishiki in our hometown of Sakura City. We brew our wines in such a way as to suppress the characteristic flavor of this late rice variety, so that they do not lose their dignity over time.
