Kumquat Gio / Barrel aged Kumquat mead
Giou is made from kumquat produced in the middle of the season in Wakayama and aged for a long time in cold storage.
The color is a clear gold. Elegant flavors of honeyed kumquat, dried figs, and Earl Grey, with kumquat astringency and smooth acidity, give a good impression. It was aged in white wine barrels for only one month, while retaining the sweetness derived from kumquat.
It is just right for drinking with a light entrée when you are not yet hungry. I would like to pair it with hummus or marinated octopus with a little spice such as pink pepper, coriander seed, or dill.
